This week I had the pleasure of reviewing a great cookbook by Brenda Bennett. As you may know, Brenda is the author of a well-known food blog, Sugar-free Mom and also runs a popular Facebook page. Today I'm sharing one of the many amazing recipes from her book: Grain-free Chocolate Glazed Donuts that are sugar-free, grain-free and also nut-free!

Just like hundreds of recipes on Brenda's popular blog, recipes in the Sugar-free Mom cookbook are easy to follow, kid-friendly and diabetic friendly - You don't have to be an experienced chef to make amazing and healthy meals!

Recipes are also tagged so you can quickly check if they are suitable for your diet (low-carbohydrate, natural sugar, sugar-free and dairy-free). All recipes are accompanied by beautiful photos and include detailed nutrition facts. This is great for everyone who is tracking their macronutrients, especially carbs.

Who Is This Book For

This book is great for everyone who avoids refined sugar and is following a lower-carbohydrate diet. Most of Brenda's recipes are gluten-free but keep in mind that not all recipes are low-carb or suitable for ketogenic, paleo or primal diets (recipes may include natural sweeteners such as honey, oats, sweet potatoes, corn tortillas, etc).

My tips: I found it easy to swap the ingredients I needed to make the recipes keto-friendly. However, keep in mind that if you're new to a low-carb diet, swapping ingredients may be challenging for you. Some recipes list "gluten-free flour" in which case I'd either use almond flour (same amount as listed) or coconut flour (half the amount). If a recipe lists oats, you can use flaked almonds or flaked coconut instead, etc. So my verdict is that I'll definitely be making more of Brenda's recipes but it's likely that I'll swap some of the ingredients to reduce the carb count.

There are over 100 delicious recipes including breakfast meals like Personalized Puff Pancakes, light bites like Crustless Spinach Bacon Quiche, main dishes like Mediterranean Chicken Cutlets or sweets like Churn-free Vanilla Ice-cream. You will condiments such as Soy Sauce Substitute! Now, let's make some donuts!! :-)

What Brenda says about her delicious chocolate donuts: Let's be honest, kids like donuts. Whenever I make a trip to get a coffee my kids want a donut. I rarely let them, but on occasion the hubby or auntie brings some home to them. I tried a few combinations of flours to get the right texture for these and finally, after quite a few unsuccessful attempts with so-so donut, these baked goodies are for the win. If you want a sweeter donut, make sure to use the 2 teaspoons of stevia. My little man hates the flavor of coconut flour but in these it's unrecognizable. You just taste the chocolate goodness.

Ingredients (makes 9 donuts)

Dry ingredients:
  • 1/2 cup coconut flour (60 g/ 2.1 oz)
  • 1/2 cup unsweetened cocoa powder (45 g/ 1.5 oz)
  • 1 tsp gluten-free baking powder
  • 1/4 tsp baking soda
  • 1/2 cup erythritol - I used powdered (80 g/ 2.8 oz) or 3 tbsp powdered stevia
  • 1/2 tsp salt (I like pink Himalayan)
Wet ingredients:
  • 1/2 cup milk - I used Aroy-D coconut milk instead (120 ml/ 4 fl oz)
  • 1/4 cup plain Greek yogurt - I used full-fat Greek yogurt (65 g/ 2.2 oz) - you can use coconut cream for dairy-free
  • 4 large eggs
  • 2 tbsp oil - I used melted ghee (30 g/ 1.1 oz) - you can make your own
  • 1 tsp sugar-free vanilla extract (you can make your own)
  • 1-2 tsp liquid Stevia - I used 30 drops of Vanilla Stevia
Chocolate glaze:
  • 1/4 cup sugar-free chocolate chips - I used dark 85% chocolate chips (45 g/ 1.6 oz)
  • 2 tbsp butter (30 g/ 1.1 oz)

Instructions

  1. Preheat the oven to 175 °C/ 350 °F. Whisk dry ingredients together using a mixer or hand whisk: coconut flour, cocoa powder, baking powder, baking soda, Erythritol and salt. Grain-Free and Keto Chocolate Glazed Donuts
  2. Blend wet ingredients together in a separate bowl: eggs, yogurt, melted ghee, Grain-Free and Keto Chocolate Glazed Donuts
  3. ... coconut milk, vanilla extract,... Grain-Free and Keto Chocolate Glazed Donuts
  4. ... and stevia. Mix until well combined (All ingredients I used were at room temperature). Grain-Free and Keto Chocolate Glazed Donuts
  5. Slowly stir the dry ingredients into the wet ingredients until combined - I accidentally did the opposite but it worked just fine. I just mixed it well to remove any clumps :) Grain-Free and Keto Chocolate Glazed Donuts
  6. Spray or grease a donut pan with some coconut oil or use a silicone donut pan (works best!). Bake for 15 minutes or until donuts bounce back when touched or toothpick near centre comes out clean. (It took 18 minutes for mine to cook) Grain-Free and Keto Chocolate Glazed Donuts

Great recipe!! Everyone loves it!!
However my batter came out too wet... and frosting wasn’t enough...
Next time I would use 3 eggs and double the amount of frosting ingredients.

These were delicious! but I do suggest when making them, to figure out your own macros. I followed the recipe other than substituting sour cream for greek yogurt and my batch made 12 donuts and macros coming out to 26.5 fat, 16 carbs, 3 fiber and 4 protein.

I think that sour cream is a great alternative with less carbs 😊 Carbs in yogurt and fermented foods are not easy to guess and they are often lower than labeled (which is a good thing): Ketogenic Diet FAQ: All You Need to Know - I used the amount as labeled just to be safe.
Also, keep in mind that not all nutrition counters / trackers use an accurate database. We use the USDA database which is considered the most accurate.

These were delicious!  I'm new to ketogenic lifestyle and was hoping to lose more weight than I am.  I have the ketostix and am in ketosis, but I have only lost 3# in 6 weeks.  I also have daily headaches. I am wondering how often I can I have this treat?  Once per day if I watch my net carbs?
P.S I love your Keto app!

Thank you Linda! I would personally avoid all treats that taste sweet for the fist 3-4 weeks, with the exception of some berries. It will help you overcome your sugar cravings and you'll avoid snacking that is not ideal for weight loss. If you have headaches, make sure you check out this post: Keto-Flu and Sufficient Intake of Electrolytes (it is likely keto-flu and you need to up your electrolytes)

You can find this mister at both Kroger and Walmart here in the USA.  I'm rather sure it can be found at other similar stores as well that carry kitchen utensils and gadgets.  Use mine for EVOO and plan to get another for avocado oil as well.

It's called "Kitchen Craft Master Class Fine Mist Spray" and I got it in the UK - I'm not sure if it's available in other countries but I seem to remember that US Amazon had some coconut spray products 😊

Good morning!  I noticed that the recipe calls for powdered erythritol or stevia, but the photo looks like you're adding liquid.  If you used the liquid, how much did you use, and do you adjust any other ingredients?  Thanks!

These are absolutely delicious!!  I don't have a donut pan, so I made them in muffin pans, about 1/2 the size of the donuts (16 instead of 9).
They are soft, mostly like a cupcake (best cupcake I've eaten also!).  Would they be "crisper" if baked in a real donut pan?  I guess I'm just used to my favorite D.D. Sour Cream.  I'm sure the frying makes the difference and wouldn't happen in the oven.
Nevertheless, I will be using this as my favorite chocolate dessert. 😊

I made them twice - in a donut pan - and they were soft, not so crispy - but absolutely delicious! I used 85% chocolate chips that are low in carbs - or you can even use 90% chocolate (less sugar). Or you can try 99% chocolate from Lindt (completely sugar-free) and add sweetener like stevia instead.
